Adobe Photoshop CS2 for Photographers: A Professional Image Editor's Guide to the Creative Use of Photoshop for the Macintosh and PC by Martin Evening. Probably the 'best of the bunch' as far as Photoshop manuals are concerned.

Up until December 2006, I used a Nikon system. Unfortunately at that time, Nikon did not produce an image stabilized super telephoto lens so I have now 'crossed to the Dark side' and changed to Canon.
